Grillin' and Chillin'

My boyfriend and I have a clear division of roles. I cook; he does the dishes. We've both been pretty comfortable in our house positions, but I think I may have underestimated my man...that boy can cook! Just look at this perfect summer meal he turned out last night. He was definitely channeling his inner Bobby Flay (even if he did get all the recipes from Martha Stewart).

Grilled chicken with homemade bbq sauce, roasted asparagus with parmesan
and warm white bean salad


Roasted Asparagus
Trim off rough ends of asparagus, spread out on a rimmed baking sheet, then coat with olive oil, salt and pepper. Sprinkle with freshly grated good Parmesan cheese and roast at 450 degrees until tender.


Easy BBQ Sauce




We've used this Martha Stewart recipe a few times, and it's a definite winner. 
Easy to make, perfect consistency and a great balance between sweet and spicy.


Simmer the following over medium heat until reduced to about 1 1/4 cups (serves 4):
1 tsp hot sauce * 1/3 cup cider vinegar * 1/2 cup light brown sugar * 1/4 cup molasses* 3 tbsp Dijon mustard * 3 minced garlic cloves * 1/2 cup ketchup

Toss chicken with 1 tbsp vegetable oil and a little salt and pepper. Throw on the grill, cook about 15 minutes, then brush and baste chicken with the sauce until cooked and glazed throughly.


We topped it off with a refreshing
Cantaloupe and Prosciutto Salad
Combine in a large bowl; serve immediately.

1 ripe cantaloupe, scooped into 1-inch balls with a melon baller * 8 ounces bocconcini (mozzarella balls) * 2 or 3 slices prosciutto or ham, cut into strips * 1 tbsp lemon juice * 1/4 cup torn mint leaves * coarse salt and pepper
