Blueberry Hill

My boyfriend's mother is pretty awesome. Every time she comes to our apartment, she comes bearing a bag of groceries. There are two things that always, always make their way into her bag: a huge bottle of olive oil and a pint of blueberries. She's such a good mama, constantly supplying us with anti-oxidants.


The conundrum is, she brings blueberries way faster than I can use them. (I know...cry me a river, right?). At last count there were seven pints in the freezer, and I've been looking for good ways to use them up for weeks. I pored through recipes, and what did I come up with? 

Blueberry muffins. Am I am innovator, or what?







After baking the muffins, we brought a few over to his parents. They were packing for a month-long trip to Croatia (dying of jealousy here) and I wanted to give them a sweet treat to stow in their carry-ons.

We hugged goodbye, and his mom sent me home with assorted groceries that would have spoiled if left in the fridge. I am now up to 8 1/2 pints of blueberries. 

Suggestions?

  1. Smoothies! Fruit soup! Erm... I saw a recipe for a lemon cake with a blueberry glaze the other day... that's all I can think of!

  8. Stew up a pint or two of blueberries. They are wonderful over cold vanilla ice cream, OR, one of my all time favorites, banana pancakes (from Joy of cooking, they are more like crepes than the flap jacks we are used to) and pour the stewed berries over them instead of syrup. SO good!
