Roasted Red Pepper and Feta Dip

Let's do a little test. When I say the word "dip", what is the first thing that comes to your mind? 

A) skinny
B) chewing tobacco
C) a flaky person
D) chips

If you chose A, well good for you. You sound like a good time. I personally think of another word when I hear the word dip. That word is par-tay. Dips are party food man, even when it's just you, sitting at home on the couch watching "Teen Mom 2" and thanking your lucky stars you didn't deliver twins when you were 16 and still looking to party with something more thrilling than dip.

Anyway, I'm way past 16, so I get my jollies by coming up with a new dip recipe. It only goes up from here folks! Next stop is a shopping spree at Dress Barn! This little bowl of delight is Roasted Red Pepper and Feta Dip, and it is yum-tastic.

My boyfriend took one bite and said, "MMM! This tastes good. How'd you come up with this Jenn?"
I replied, "Cause I gots it like that, boyeeeee." Then we chest-bumped and he told me how much he loved the dip's beautiful orange color. Anyway, if you'd like to recreate such an experience in your own home while watching Teen Mom 2 or the program of your choice (of if you have an actual par-tay to attend), whip out the food processor and commence blending the following:

Roasted Red Pepper and Feta Dip with homemade pita crisps

-1 jar of roasted red peppers
-1/2 cup feta cheese
-1 clove garlic
-a few dashes of smoked paprika
-a few dashes of oregano
(adjust as necessary--a squeeze of lemon juice would probably also be lovely)

For the chips, slice some pita breads into triangles, mist with olive oil spray then sprinkle with oregano, pepper, kosher salt and garlic powder. Bake until crisp. Enjoy.

    This dip looks wonderful... and I LOVE the pita crisps! I didn't know it was that easy. I must make some too.

  15. these are two of my favorite things! I've got a butt-load of feta in the fridge that needs a place other than my salad! sounds delish and much healthier than most of my dip recipes. Come to think of it, I've got a bunch of red peppers too! This is meant to be.
