I have never considered myself a trendsetter. In fact, I'm usually the last one to know that something is actually trendy. I mean, take a peek in my closet. I still wear trucker hats and Hypercolor t-shirts. I'm hardly a barometer for all that is hip and current.
That's why it came as no surprise whatsoever that I stumbled on a famously popular food blog purely by accident. It's been hip since 2003, and I'm just now finding it. It's called 101 Cookbooks.com, and you've likely been surfing this healthy cooking site for half a decade. I can't believe none of you told me about it. I thought we were friends.
It's okay. I'm over it.
Anyway, I was looking to use up a huge bag of broccoli and came across Heidi's recipe for Double Broccoli Quinoa. The broccoli doubles because after it's quickly boiled, half of it is pulsed in the food processor with almonds, garlic, a bit of parmesan and olive oil to make a broccoli pesto (I know, right? Genius!) Then you whip up a batch of quinoa, top with the pesto, and throw the rest of the cooked broccoli on top. She also mixed it with almonds and avocado, which I would have done too if I didn't have to hit the grocery to get more ingredients. Once the work clothes come off and the Hypercolor t-shirt goes on, it's game over for this gal.
Double the broccoli, double the fun. I've been saying that for years. Catchy, right?

ReplyDeleteThat's so funny, I literally came across that blog about a week ago and was perplexed as to how I could have gone so long without it! Love broccoli and could eat it every day and never tire of it, looks yummy there with the quinoa :)

ReplyDeletei needed to read this last night. I made plain quinoa last night. sorta fell flat with the troops. Don't blame them, I didn't exert much effort. I don't mind plain quinoa but quinoa with double duty of broccoli? Totally. sorry I've been off the gird, girly! I'm glad to be back and reading your stuff...you rock that trucker hat, ya hear?
